Kinzie Sweet BBQ Quinoa Corn and Feta Salad
This vibrant salad is the perfect balance of smoky, sweet, and tangy flavors—thanks to the addition of Kinzie Sweet BBQ Sauce in both the quinoa and the dressing. Loaded with fresh herbs, sweet corn, and creamy feta, it’s hearty enough for a meal but also makes an excellent side for any summer BBQ or picnic.
Ingredients
For the Salad
- 1 cup uncooked quinoa
- 2 cups broth of choice
- 2 tablespoons Kinzie Sweet BBQ Sauce, plus more for serving
- 1 cup corn kernels (fresh, canned, or thawed from frozen)
- ¼ cup diced red onion
- ⅓ cup feta cheese
- ¼ cup fresh herbs (we used cilantro and dill)
For the Dressing
- ¼ cup olive oil
- 1 tablespoon Kinzie Sweet BBQ Sauce
- 2 tablespoons fresh lemon juice
- Splash of apple cider vinegar or red wine vinegar
- ¼ teaspoon hot sauce (more or less to taste)
- 1 garlic clove, minced
Instructions
Cook the Quinoa
In a medium saucepan, bring the broth and 2 tablespoons of Kinzie Sweet BBQ Sauce to a boil. Add the quinoa, reduce to a simmer, cover, and cook for about 12 minutes or until the liquid is absorbed. Fluff with a fork and let cool.
Make the Dressing
In a mason jar or small bowl, combine all dressing ingredients. Shake or whisk until fully emulsified.
Assemble the Salad
Once the quinoa is cooled, add corn, red onion, feta, and fresh herbs. Pour the dressing over the salad and toss gently to combine.
Taste and Adjust
Taste and adjust seasoning if needed—add a touch more Kinzie Sweet BBQ Sauce if you love extra bold flavor!
Serve and Store
Serve immediately or chill for an hour to let the flavors meld. Store in an airtight container in the fridge for up to 3 days.
