Kinzie Ghost BBQ Cheesy Beef Oven Roasted Sweet Potatoes
Ingredients
2 large sweet potatoes (peeled and diced into 1-inch cubes)
1 lb ground beef (or ground turkey for a lighter option)
1/2 cup pimento cheese
2 tbsp Kinzie Ghost BBQ Sauce (plus extra for drizzling)
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 avocado (sliced)
Fresh cilantro (for garnish)
Instructions
1. Roast the Sweet Potatoes
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, garlic powder, salt, and black pepper. Spread evenly on a baking sheet lined with parchment paper. Roast for 25–30 minutes, flipping halfway through, until tender and slightly caramelized.
2. Cook the Beef
Heat a large skillet over medium heat. Brown the ground beef, breaking it up as it cooks (about 6–8 minutes). Once fully cooked, drain any excess grease. Stir in pimento cheese and 2 tbsp of Kinzie Ghost BBQ Sauce. Cook for 2–3 minutes, until melted and evenly combined.
3. Assemble the Bowls
Divide roasted sweet potatoes evenly among four meal prep containers. Top each portion with the BBQ beef mixture.
4. Add Fresh Toppings
Slice avocado and add a few slices to each container. Garnish with fresh cilantro and drizzle additional Kinzie Ghost BBQ Sauce for an extra kick.
