Kinzie Fiery BBQ Pineapple Meatballs
Ingredients
- 2 lb ground beef
- 1 cup Kinzie Fiery BBQ Sauce, divided
- 3/4 to 1 cup breadcrumbs
- 2 eggs
- 1/3 cup fresh pineapple, finely chopped
- 1 small jalapeño, finely chopped (remove seeds for less heat)
- 4 cloves garlic, minced
- 1 white onion, finely chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tbsp high-heat oil (for pan-frying)
Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine ground beef, 3/4 cup Kinzie Fiery BBQ Sauce, breadcrumbs, eggs, pineapple, jalapeño, garlic, onion, salt, and pepper. Mix until well combined — but don’t overwork the meat.
- Roll mixture into 1 to 1 ½ inch meatballs.
- Heat oil in a cast iron skillet over medium heat. Brown the meatballs in batches, turning to sear all sides (about 2–3 minutes per side).
- Once browned, transfer the skillet to the oven and bake for 10–15 minutes, or until meatballs are cooked through (internal temp should reach 160°F).
- Brush or drizzle the remaining 1/4 cup of Kinzie Fiery BBQ Sauce over the meatballs before serving.
- Optional: Garnish with fresh herbs or serve with roasted veggies, rice, or skewered as party bites.
