Ingredients
- 2 tbsp olive oil, plus more if needed
- 1 lb ground beef
- 3 tbsp Kinzie Espresso BBQ Sauce (plus more for brushing/serving)
- ¼ cup finely chopped onion
- 1 small jalapeño, diced
- ½ tsp ground cumin
- ¼ tsp garlic powder
- ¾ tsp kosher salt
- 10 corn tortillas
- 1 cup refried or stewed beans
- 1 cup shredded Cheddar cheese
- Toppings: chopped cilantro, sour cream, extra Kinzie Espresso BBQ Sauce
Directions
1. Preheat & Prep
Preheat oven to 425°F. Line a rimmed baking sheet with foil or parchment and coat lightly with 1 tbsp olive oil.
2. Make the Filling
In a medium bowl, combine ground beef, chopped onion, diced jalapeño, 2 tbsp Kinzie Espresso BBQ Sauce, cumin, garlic powder, and salt. Mix until fully incorporated.
3. Soften Tortillas
Wrap tortillas in a damp paper towel and microwave for 30 seconds until soft and pliable.
4. Assemble the Tacos
On one half of each tortilla, spread about 3 tbsp of the beef mixture in a thin layer. On the other half, spread 1 tbsp beans. Sprinkle with 2 tbsp cheese. Fold tortilla in half to form a taco and place on the baking sheet. Repeat with remaining tortillas.
