Kinzie Ghost BBQ Sauce Twice Baked Potatoes Recipe

Ingredients

For the Potatoes

  • 4 medium-sized Russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

For the Filling

  • 1/4 cup Kinzie Ghost BBQ Sauce (plus more for topping)
  • 4 tablespoons melted butter
  • 1/2 cup sour cream
  • 1 tablespoon dry ranch dressing mix
  • 1/2 cup chopped green onions, divided
  • 1 1/2 cups freshly grated cheddar cheese, divided
  • 5-6 strips bacon, cooked and chopped, divided
  • Parsley for garnish

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with foil.
  2. Prick each potato a few times with a fork, then brush all over with olive oil. Sprinkle with half the salt and pepper, rub to distribute evenly, flip, and repeat.
  3. Bake the potatoes at 400°F for 45-60 minutes (larger potatoes may take up to 75 minutes), turning once or twice during baking, until fork tender.
  4. Let the potatoes cool for 5-10 minutes. Slice each potato in half lengthwise and carefully scoop out most of the inside, leaving about 1/4-inch of potato around the edges and bottom to prevent tearing.
  5. In a large mixing bowl, combine the scooped-out potato filling with melted butter, Kinzie Ghost BBQ Sauce, sour cream, half the cheddar cheese, ranch dressing mix, half the bacon, and half the green onions. Mash until smooth, adding a splash of milk if needed to achieve a creamy consistency.
  6. Spoon the mashed potato mixture back into the potato skins, mounding it evenly. Top with the remaining cheddar cheese.
  7. Return the potatoes to the oven and bake at 400°F for 15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and top with the remaining bacon, green onions, and a drizzle of Kinzie Ghost BBQ Sauce. Garnish with fresh parsley if desired.
