Kinzie Fiery BBQ Chicken Nachos Recipe

Kinzie Fiery BBQ Chicken Nachos
Instapot Quick Shredded Chicken
2 pounds chicken breasts* (fresh or frozen)
1 1/2 cups chicken broth
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons garlic powder
Nachos
1 bag of tortilla chips of choice
1/3 C Kinzie Fiery BBQ Sauce, more for drizzle at the end
Toppings of choice, we used:
1/2 C pinto beans
1/4 C minced red onion
1.5 Cups Shredded Mozzarella Cheese
1 jalapeno, sliced
1/2 avocado, sliced
1/4 C sour cream of choice
 
Instructions:
1) Put the chicken in the instant pot or pressure cooker, sprinkle it evenly with the seasonings, and then pour over the broth.
2) Put the lid on the instant pot and set the valve to seal.
*For frozen chicken breast: cook on a manual, high setting for 15 minutes.
*For fresh/raw chicken breasts:  cook on a manual, high setting for 12 minutes.

3) Allow the pot to naturally release its pressure for around 10 minutes. Following that, open the steam valve to release any excess steam.

4)Shred the chicken in the pot or put the chicken in a bowl and shred it using two forks or a hand mixer.

5)In a mixing bowl, mix the prepared shredded chicken with the 1/3 C of Kinzie Fiery BBQ sauce. 

6) Assemble your nachos: on a lined baking sheet make a bed of tortilla chips and top with the prepared Kinzie Fiery BBQ Chicken, beans, and then your cheese. Broil on high for 2-3 minutes until the cheese is melted and bubbling. 

7) Remove from the broiler and top with the rest of your toppings, with a final drizzle of Kinzie Fiery BBQ Sauce to finish. Enjoy!
