Holiday Lamb Loin Chops with Sweet BBQ Glaze

Ingredients

8 lamb loin chops (about 1-inch thick)

2 tablespoons olive oil

2 teaspoons dried rosemary

2 teaspoons dried thyme

4 cloves garlic, minced

Salt and black pepper, to taste

1 cup Kinzie Sweet BBQ Sauce

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1/2 teaspoon smoked paprika

Optional garnish: Fresh rosemary sprigs

 

Instructions

Prepare the Lamb Chops

1. Pat the lamb chops dry with paper towels.

2. Rub both sides with olive oil, rosemary, thyme, minced garlic, salt, and pepper.

3. Let the lamb chops marinate at room temperature for 30 minutes, or cover and refrigerate for up to 4 hours.

 

Make the Sweet BBQ Glaze

1. In a small saucepan over low heat, combine Kinzie Sweet BBQ Sauce, honey, Dijon mustard, apple cider vinegar, and smoked paprika.

2. Stir until well blended and heated through, about 5 minutes.

3. Remove from heat and set aside.

 

Cook the Lamb Chops

1. Heat a large skillet or grill pan over medium-high heat.

2. Sear the lamb chops for 3-4 minutes per side for medium-rare, or longer if you prefer them more done.

3. During the last minute of cooking, brush the lamb chops generously with the Kinzie Sweet BBQ Glaze.

 

Finish the Dish

1. Transfer the lamb chops to a plate and let them rest for 5 minutes to retain their juices.

2. Drizzle any remaining glaze over the top.

 

Serve

1. Garnish with fresh rosemary sprigs and cranberries, if desired.

2. Pair with holiday sides like roasted Brussels sprouts, sweet potato mash, or couscous.
