Kinzie Sweet BBQ Chicken Pizza Stuffed Spaghetti Squash
This low-carb recipe combines all the delicious flavors of barbecue chicken pizza with the healthy twist of spaghetti squash. Perfect for a satisfying dinner or meal prep!
Ingredients
1 spaghetti squash
1 tablespoon olive oil
2 tablespoons Kinzie Sweet BBQ Sauce
1 cup cubed rotisserie chicken or 1 large grilled chicken breast, sliced
1 cup shredded mozzarella cheese
1/4 cup sliced red onion
Optional: garnish with cilantro or parsley
Instructions
1) Prepare the Squash
Preheat your oven to 400°F. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle each half with olive oil and rub it into the flesh of the squash. Place the halves cut-side down on a baking sheet.
2) Bake the Squash
Bake for 20–25 minutes, or until the squash is fork-tender. Keep in mind that cooking times may vary based on the size of your squash.
3) Create the Filling
Remove the squash from the oven and let it cool slightly. Using a fork, scrape the squash flesh into strands and transfer it to a mixing bowl. Toss the squash strands with cubed chicken, 2 tablespoons of Kinzie Sweet BBQ Sauce, and cream cheese (optional for creaminess).
4) Assemble and Broil
Spoon the mixture back into the hollowed squash halves to create “boats.” Top each with shredded mozzarella cheese. Place the boats under the broiler on high for 1–4 minutes, or until the cheese is melted and bubbly.
5) Garnish and Serve
Remove the boats from the oven. Garnish with sliced red onion, a drizzle of Kinzie Sweet BBQ Sauce, and fresh cilantro or parsley if desired. Serve hot and enjoy!
